Instructor's Favorite Fast, Easy & Healthy Meals

We could all use new ideas when it comes to quick, simple and nutritious meals. Here are a few of our instructor's favorite dinners for busy weeknights. Share your favorites in the comments!

Jennifer

Seared tuna with sautéed onions, red peppers, broccoli and jalapeños and topped with avocado. To make it season the tuna with salt & pepper tuna then sear it on high heat sear with a little olive oil for 3 minutes per side.

Carissa

Curried yellow lentils (made in the crock pot) served over spinach. To make it put some lentils, vegetable stock, onions, garlic & raw chicken breasts in the slow cooker. Season with salt, pepper & curry powder and cook on low for 8 hours.

Corrie

Baked pesto chicken served over spinach. To make it put some pesto in an oven safe dish, place the chicken on top and then cover with more pesto and bake covered at 375 for 25 minutes.

Emily

Roasted brussels sprouts with salmon (you can make it using one pan!). Toss the brussels sprouts with olive oil and season and bake them on a sheet pan for 15 minutes at 400 degrees. Then add the salmon to the same pan, seasoning with salt/pepper/garlic. Cook another 15 minutes or until salmon is cooked and brussels sprouts are crisp.
