Healthy Dessert Recipes

Spinach Brownies

Recipe adapted by Chelsea from Paleomom.

  • 1 1/4 cup frozen chopped spinach, thawed and drained
  • 6 oz chocolate chips (I use these)
  • 1/2 cup extra virgin coconut oil, melted (I use this or this)
  • 1/2 cup butter, melted
  • 5 eggs
  • 1/3 cup honey
  • 1/2 banana
  • 1/4 cup cocoa powder
  • 1/4 cup coconut flour
  • 1 cup almond flour (I use this)
  • 1 T vanilla
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cream of tartar

Preheat oven to 325. Grease a 9×13 pan with butter or coconut oil. Melt coconut oil and butter and chocolate together over low heat on the stove or in the microwave (be careful not to burn, heat in 30 second increments until melted). Stir in butter, vanilla, and honey and let cool. Blend spinach, eggs, and the banana half in a blender or food processor. Add chocolate mixture and blend until just mixed. Mix dry ingredients in a big bowl. Add spinach/chocolate mixture and stir until combined. Pour batter into baking pan. Bake for 30-40 minutes (until toothpick comes out clean). Cool completely (this is important so as not to taste the spinach!). Cut into squares and watch your kids eat ‘em up!

Sugar Detox Banana Bread

To make this sugar detox compliant use bananas that aren't too ripe. But if you aren't sugar detoxing - feel free to use ripe ones to make it sweeter. This is always yummier served with a smear of grass-fed butter. Recipe from Civilized Caveman Cooking.

  • 4 bananas, (2 1/2 cups mashed)
  • 4 eggs
  • 1/2 cup almond butter
  • 4 tablespoons grass-fed butter, melted (can substitute coconut oil)
  • 1/2 cup coconut flour (or almond flour, macadamia nut meal, etc)
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • pinch of sea salt

Instructions

  1. Preheat your oven to 350 degrees fahrenheit
  2. Combine your bananas, eggs, and nut butter, and grass-fed butter in a blender, food processor, or mixing bowl and mix well (if using a mixing bowl you need a good hand-mixer)
  3. Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well
  4. Pour your batter in a greased loaf pan and spread it evenly
  5. Place in your preheated oven and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean
  6. Remove from oven and flip your bread out onto a cooling rack
  7. Slice and serve
