As you may know we just celebrated our 6 year anniversary over the weekend. Thank you so much to everyone who joined us. If you came to this year's party or any of our anniversaries in the past you may have had the chance to sample a Bunny Muffin. These addictive sweets are made by Pam (Jennifer's mother) with love each year. Although they may not be the world's healthiest choice they are so comforting and delicious. Make these around the holidays for a cozy treat!
Bunny Muffins

Bunny Muffin Recipe
- 1 ¼ cups coconut oil melted
- 2 cups sugar
- 2 ½ cups flour (or your favorite GF substitute)
- ½ cup oatmeal or oatbran
- 3 eggs
- 2 teaspoons vanilla
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 ½ cups apples, peeled and grated
- 1 ½ cups grated carrots
- ½ to ¾ cup golden raisins
- ½ to ¾ cup copped pecans
Mix all ingredients together until well blended.
Spray mini muffin tins with non-stick spray and sprinkle a touch of sugar on the bottom of each tin.
Fill muffin tins 2/3 full. Bake in 350 degree oven for about 25 minutes or until golden brown. ENJOY!
