Summer is here and its one of my favorite times of the year to spend in Austin. I don’t know about you, but one of my favorite summertime activities is to be out on Lake Austin and BBQ with friends and family. There’s also nothing better than sipping on a refreshing cocktail after a day on the water and watching a beautiful sunset. I just recently took my annual "girl's trip" to a friend's lake house and did just that with a tasty Greyhound in hand. (see recipe below)
Skinny Summer Cocktails
Dancers Shape
Whether you’re spending your summer on the lake, poolside, or on one of Austin’s many patios, finding cocktails that don’t bust your entire workout can be difficult. Thankfully, restaurants around town offer “skinny cocktails” so you can sip guilt free. Jasper’s and The Bonneville are two great spots to visit this summer, and they were kind enough to share their “skinny” recipes for you to try at home:
Located at The Domain, Jasper’s boasts a menu reflecting a “home cooking” style with the best of America’s regional cuisine. The second restaurant concept of Executive Chef and Partner Kent Rathbun, promises to deliver a unique array of tantalizing dishes.
Skinny Margatini from Jasper’s:
- 1½oz Cuervo Silver
- 1oz Fresh Lime Juice
- ½oz Agave Nectar
- Garnish: 1 Squeezed Lime, Raw Sugar Half-Rim
A local gem hiding in plain sight, The Bonneville gives diners stunning views of Lady Bird Lake while enjoying the restaurant’s contemporary New American dishes. Perfectly refreshing for summer and waist-line friendly, The Bonneville’s ever popular and long-standing Pepino Fresco cocktail is one skinny cocktail you must try.
- 1 ½ oz House infused cucumber vodka
- 1/2 oz of Fresh Squeezed Lemon Juice ( ½ lemon)
- 1/4 - 1/2 oz simple syrup
- 3 slices cucumber
- Top up with Soda water
Finally, Jennifer's go-to skinny summer cocktail:
The Greyhound - compliments of "Vanda" (Jennifer's childhood buddy)
- 1 1/2 oz Vodka of choice
- Fresh Squeezed Grapefruit Juice (roll grapefruit to get juicy then cut and squeeze)
- Top with Soda water
Enjoy!
